Let us first begin with a disclaimer: We are not experts.  We do not carry fancy culinary degrees.  We are not even Peruvian.  We are just typical dudes that LOVE to grill.  We also have an un-holy (er  holy) love of Pollo a la Brasa.  We will do anything to get it.  If you live in an area of the country without a Peruvian population like we do, that unfortunatly means one of 3 options: #1 ROAD TRIP!, #2 very expensive Overnight shipping, #3 do our damnedest to approximate this most holy of creations.  Being that very few people have a rotisserie attachment for their grill, many of our recipes will side-step the rotiserie in favor of the indirect grilling method.  This will no doubt wholly offend the Pollo a la Brasa community as this is arguably the corner-stone of Pollo a la Brasa.  If you are so lucky as to own one of these contraptions, PLEASE use it and adjust the recipe accordingly.   If not, don't worry...we will get you the taste you've been craving from just about type of flame.
